Who doesn’t love cake?? This perfect-for-one dessert recipe has a twist, though — it’s actually good for you. If you’re like me, you’re very intrigued at the idea of adding black beans to something chocolate-y, but I am here to tell you that one weird ingredient doesn’t keep this from being my new go-to evening splurge.
I’m not sure if you’ve seen any of Lori Zanini’s other recipes, but this one totally lives up to her reputation of delivering big taste without sacrificing your health. If you don’t already have her cookbook check it out!
Chocolate Mug Cake with Strawberries
• ¼ cup black beans
• 1 tablespoon old fashioned or quick cooking oats
• 1 tablespoon cocoa powder
• 2 teaspoons maple syrup
• 1 teaspoon unsweetened almond milk
• 1 teaspoon canola oil, plus more for greasing the mug
• ½ teaspoon vanilla extract
• ¼ teaspoon baking powder
• 3 strawberries, sliced
1. In a blender, combine the ingredients and process until smooth.
2. Pour into a lightly greased coffee mug.
3. Microwave for 1 to 2 minutes, depending on the power of your microwave. Start with 1 minute, and continue 30 seconds at a time until it is firm in the center.
4. Let cool for 5 minutes before removing from the mug.
5. Serve, topped with strawberry slices.

There are times when life gets so busy that between work obligations and personal plans, it feels like I’m juggling way more than I’m meant to handle. You might have heard I’ve just signed up to guest star on ABC’s new comedy “Speechless,” and while I’m absolutely thrilled to play Miss Bloom, an enthusiastic choir teacher, I know between all the things I have going on personally and professionally some major adjustments will have to be made in order to perform at my best.

It was exactly what I needed to get my priorities back on track, and it helped me prioritize my health more than I had been because of my hectic schedule. Nutrition (and food in general!) is extremely important to me, so when my calendar really gets cranking planning my healthy meals is the first thing to go wayside.

Surely by now you’ve learned that I love a good dessert. The key for me is to be smart about it! I once read that if you want to indulge in something, make it yourself. Want a pizza? Make one at home! Craving french fries? Break out the potatoes! The act of cooking something yourself not only gives you an opportunity to use healthier ingredients, but also reminds you of how much work goes into what you eat. After putting in all the work of cooking something, you’ve earned the treat!
With that in mind, I try to make dessert myself. It’s a great way to satisfy my sweet tooth and keep my willpower in check. Not only is this recipe yummy, but it’s only 170 calories per ½ cup serving!
Easter is over but the grocery store aisles are still lined with boxes and boxes of pink, yellow and baby blue Peeps! While I adore pasta, lately I’ve been loving a yummy pasta alternative — spaghetti squash! It’s like I’ve found a carb loophole, and I couldn’t be more excited. It might seem strange, but this vegetable is so good it might even fool your dinner guests into thinking they’re having the real thing.
You can seriously do anything with the spaghetti squash that you would do with the real thing, but I like to keep it simple.
Sometimes you need a night in, and a pizza party can be just what the doctor ordered. Besides, if you load it up with veggies, a pizza is really just a few steps away from being a salad, right? 🙂

A few weeks ago I was at an LA juicery when I took notice of all the juices promising the benefits of beautiful skin. There were so many colorful options that looked delicious but I wanted to learn more before I bought in. When I got home I researched the beauty benefits of different fruits and veggies.
